Let's Talk Turkey...

We had a pretty good Christmas. We kept up with all the traditions, baking, going out on the town to find the best Christmas light display. All that stuff.


The girls read Mikhail 'T'was The Night Before Christmas' like we do every year too.

I cooked two turkeys so we could have leftovers. We did have turkey sandwiches but also had Shepard's Pie the day after. I tastes like turkey dinner all over again. I love the fact that you just pull out all the leftovers from the day before and layer them together and bake, that's it. It has become a tradition every boxing day for us.

Another one we just tried was Turkey Pot Pie. Just whip up your favourite pie pastry. I doubled the veggies and used a little less then 2 cups of broth so I didn't have to cool the filling before baking. I only used half of the veggies I cooked and froze the rest of the cooked filling for another night of easy cooking.

If you have a food processor here's a super easy recipe for double pie pastry...

2 1/2 cups flour
1 cup butter, cold and cut
1 teaspoon salt
1 teaspoon sugar
4-6 tablespoons ice water
Combine flour, salt & sugar in food processor. Add your cold, cut up butter and mix in processor until you have a course pea size mixture. Add water 1 tablespoon at a time until mixture resembles crumbs. If dough holds together when pinched it's ready. Split the mixture into two even groups and form two balls. Roll out on a floured surface. Be sure not to handle your dough much or it will not turn out the same.

Another recipe we have tried is Turkey Tetrazzini which wasn't bad either. So if you have cooked turkey in the freezer or have just cooked your turkey hopefully this will help you use up some of the leftovers.

Merry Christmas!

Gingerbread Village that wasn't...

The kids and I sat down and tried to make a gingerbread village last weekend. I prepared everything, including the icing. But when we sat down and actually attempted to put the little houses together that's when the frustration kicked in. The icing wasn't holding it together well enough for the kids and when the bag of icing popped opened, that's when Chastity says in a frustrated tone, why don't we just eat it then. I looked at her a little surprised, continued to pick up the little chimney, but instead of adding it to my house slipped it into my mouth. I knew what that would start but at that point I didn't care. And this is what we were left with... That white patch is where the bag of icing popped. We decided that it's what makes more sense to us anyway, we live in the forest. :)

I am being referred to another doctor who does Prolotherapy for my chronic pain now because although acupuncture works for a while it is not long term. They have finally figured out that because I have a flexible body type, when I got hit that hard in the accident my ligaments were stretched too far and that is why everything keeps popping out of their joints and why my muscles are always so tense, they are doing the work of holding everything together. I get to wear a belt to hold my hips in place too. A $40 fashion statement that not to many people find fashionable, I think they are just jealous, lol.

I used tissue paper and stickles for the wings...

Three Years Ago Today

My baby and only son was born weighing 8 lbs 2 ozs. He was two weeks early!! He had the softest cheeks I had ever seen when he was a newborn. His sisters could NOT wait until he was here...

Mikhail started standing and walking furniture when he was 6 months, we knew we were in trouble then. Here he is at 10 months trying to escape...


And when just plain old climbing wasn't good enough he would move things over and climb onto them, yes, at 10 months. He was (and is) mischievous too.


For his first birthday I made him a cake all for himself.

This is as messy as he got, poor guy had a cold and didn't enjoy it so much.

So we had an 18 month birthday celebration for him where he got to be the prince AND enjoy his cake! We had water balloon fights afterwards, it was sooo fun.

Canada Day

Last summer, he loves being outside.

His cake from today. He picked out the candles. They totally spelled his name wrong so I changed it to Miky, his nickname.


We spent some time outside in the snow sledding, building a snowman (lady actually) and having snowball fights.
